Chicken Red Enchiladas

Enchiladas are a classic Mexican dish made with a guajillo and ancho chile sauce, shredded chicken, and Tierra Sol White Corn tortillas. 



This recipe serves 4-6 and follows traditional methods.​


Ingredients

For the chicken

  • 500 g chicken breast or thighs

  • ½ onion

  • 2 garlic cloves

  • Salt

  • Chicken broth (optional)​​

For the sauce

  • 5 guajillo chiles

  • 4 ancho chiles (cleaned and seeded)

  • 4 tomatoes or 500 g

  • ¼ onion

  • 2 garlic cloves

  • ¼ tsp oregano

  • Salt

  • Pepper

To assemble

  • 12 Tierra Sol White Corn tortillas

  • 1 cup crumbled fresh cheese

  • ½ cup chopped onion

  • Cream

  • Vegetable oil.​


Preparation

Chicken

  1. Cook the chicken in water with onion, garlic, and salt until tender (about 20-25 min)

  2. Once cooked, remove from the stove for it to cool down

  3. Reserve the broth

  4. Shred the chicken

Red Sauce

  1. Lightly toast the chiles

  2. Soak them in warm water for 20 min

  3. Roast tomatoes, onion, and garlic

  4. Blend everything with oregano, salt, pepper, and 1 cup chicken broth until smooth; strain if needed

  5. Fry the sauce in oil for 10 min over low heat.​

Assembly and Cooking

  1. Dip the tortillas quickly in hot sauce and oil

  2. Fill with chicken, roll, and place in a dish

  3. Cover with more sauce, cheese, onion, and cream

  4. Enjoy!
